Pear-Jicama-Berry Salad
For the Salad:
2 cups leafy greens (I like a mix of arugula and sweet baby romaine)
1 pear, peeled and chopped
1 pint berries (blueberries, blackberries or strawberries)
1 small jicama, peeled and chopped
For the Dressing:
1 small lime, juiced
2 tsp honey
2 tsp balsamic vinegar
¼ cup olive oil
Salt & Pepper, to taste (I use ½ tsp and ¼ tsp, respectively)
Instructions:
Wash, prep and arrange all salad ingredients in large bowl. In small mason jar, combine all dressing ingredients and shake well. Drizzle dressing on salad and you’re ready to go!
