This lovely soup recipe will do all of that and so much more! The tomatoes are full of vitamin C and lycopene, which can bolster your immune system, nourish your cells, and, many studies have shown, may even have a beneficial effect on cancer and heart health. So get ready to pick, chop and blend for a simple and nutritious meal that’s sure to put a spring in your step and a smile on your face.
Easy Summer Gazpacho Soup
6 organic tomatoes (I like to use Roma or Heirloom, if I can find them)
1 red or yellow bell pepper
1 small onion
1-2 cloves garlic
1 large cucumber
2 tsp organic apple cider vinegar (sherry or white wine vinegar works too)
½ cup olive or avocado oil
Salt and pepper, to taste
1 small avocado
Roughly chop first five ingredients.
Blend on high, using your Vitamix or any type of blender.
Add the vinegar, salt and pepper; blend again.
Slowly drizzle in olive oil until blended well. (I personally like it a bit chunky.)
Chill for 1-2 hours.
Serve in a bowl with chopped avocado and cilantro as garnish.
