Ready for Some Juicy Goodness?

Round, red, plump and delicious tomatoes are bursting with all kinds of health-promoting qualities that will leave you screaming for more.


Are you looking for an easy recipe to nurture your body and use up some of those extra tomatoes from your garden?  Look no further my friends.  This lovely soup recipe will do all of that and so much more! The tomatoes are full of vitamin C and lycopene, which can bolster your immune system, nourish your cells, and, many studies have shown, may even have a beneficial effect on cancer and heart health.  So get ready to pick, chop and blend for a simple and nutritious meal that’s sure to put a spring in your step and a smile on your face.


Easy Summer Gazpacho Soup


Ingredients:

6 organic tomatoes (I like to use Roma or Heirloom, if I can find them)

1 red or yellow bell pepper

1 small onion

1-2 cloves garlic

1 large cucumber

2 tsp organic apple cider vinegar (sherry or white wine vinegar works too)

½ cup olive or avocado oil

Salt and pepper, to taste

1 small avocado

Cilantro


Instructions:

Roughly chop first five ingredients.    

Blend on high, using your Vitamix or any type of blender.    

Add the vinegar, salt and pepper; blend again.    

Slowly drizzle in olive oil until blended well.  (I personally like it a bit chunky.)    

Chill for 1-2 hours.    

Serve in a bowl with chopped avocado and cilantro as garnish.
